Shawn and I had this for dinner tonight and I must say, IT WAS DELICIOUS (healthy, but flavorful)!
We love Pork Chops + Grilled Pineapple so those pair so nicely together plus adding in the Chili Coleslaw was amazing (IF you have time to fix in AM before dinner, it is way better after it has sat, but I didn’t today – it was still good! The dish is so flavorful and was SUPER easy to make (plus under 400 calories + makes for great leftovers)!
- 1 1/2 Tablespoon Chili Powder
- 1 1/2 Tablespoons Brown Sugar
- 3 tablespoons Apple Cider Vinegar
- 2 tablespoons of Orange Juice (we use Natalies)
- 1 tablespoon Sugar
- 5 cups of a small Green Cabbage, sliced small
- 1/3 thinly sliced Red Onion
- 1/3 Red Sweet Pepper cut into strips
- Cinnamon
Preheat the grill to medium. Lightly coat the grill with oil.
In a shallow bowl, combine 1 tablespoon chili powder, brown sugar, garlic powder, onion powder, and salt.
Sprinkle both sides of pork with spice mixture and lightly cover with olive oil.
I let sit at room temperature for about 10 minutes before putting on the grill.
While the pork chops are grilling, for chili slaw, in a large bowl, I love these, mix together apple cider vinegar, orange juice, oil, sugar, and remaining 1/2 tsp. chili powder. Add in your cabbage, onion, and sweet pepper; toss. Season with salt and pepper.
Add your pineapple sprinkled in cinnamon on the grill for 8-10 minutes while your pork chops finish cooking.
Plate, and serve.
I wish I would have poured the chili slaw sauce on my pork chops heated for more flavor but I mixed the slaw + pineapple + pork chops together for a bite, and YUM!
